
YOGALEAN: Summer in a bowl
by Beth Shaw | 21/07/2017This no-cook summer salad of avocado and tomato is the perfect way to indulge your guacamole fetish—without the chips!
What you’ll need:
4 ripe avocados, pitted and peeled
3 small ripe tomatoes, finely chopped
1 handful flat-leaf parsley
1 clove garlic, crushed
1/2 shallot, minced
1/2 lemon, juiced
2 tablespoons extra-virgin olive oil
Make it YogaLean
1. In a mixing bowl, small the avocados with the back of a fork until you reach your desired chunkiness.
2. Fold in remaining ingredients
3. Serve with sliced cucumber, celery, carrots, or other favorite dipping veggies.
Serves: 8 to 10 people
