
YogaLean Recipe: Lemon Garlic Artichoke Salad
by Beth Shaw | 2/05/2016In one artichoke, we reap lean benefits from its diuretic properties, along with its anti-oxidants, which support a strong immune system, which in turn will help us stay healthy for exercise. Among its abundance of benefits, garlic is a detoxifier that triggers the liver to release toxins from the body—a great aid to maintaining a healthy and lean stomach.
What You'll Need:
5 TBSP FRESHLY SQUEEZED LEMON JUICE
1/4 CUP OLIVE OIL
1/2 TSP SEA SALT
1 TSP FRESHLY GROUND BLACK PEPPER
1/4 CUP PARSLEY
3 CLOVES GARLIC, DICED
12 BABY ARTICHOKES—FROZEN OR CANNED, CHOPPED
6 CUPS MIXED GREENS
MAKE IT LEAN:
1. In a blender, blend the lemon juice, olive oil, salt, pepper, parsley, and garlic until smooth and thick, approximately 2 to 3 minutes.
2. Toss dressing with artichokes and serve over mixed greens.
Enjoy!
