
YOGALEAN: Summer Salad Time!
by Beth Shaw | 30/05/2017Why cook when the temperatures rise? Create this scrumptious vegetarian salad for a dose of the healthy fats and good protein the body deserves.
This is my favorite salad. It gives us the healthy fats our body desires, along with a healthy dose of protein to keep us full for a long while. Pine nuts and walnuts are high in iron, which helps regulate the blood circulatory system, and loaded with protein; in fact, pine nuts have one of the highest protein levels of all nuts.
Note: Toasting nuts extracts their natural oils, which adds an incredible depth of flavor sure to enhance your enjoyment.
What you’ll need:
1/2 cup walnuts, coarsely chopped
1/2 cup pine nuts
1/2 cup gorgonzola cheese, crumbled
1 head bibb lettuce, chopped
1 pear, sliced
1 apple, sliced
Dressing
2 Tablespoons extra-virgin olive oil
2 Tablespoons balsamic vinegar
Salt and Pepper, to taste
Make it YogaLean:
1. In a skillet over medium-high heat, add walnuts and pine nuts. Toast for 3 to 5 minutes—stirring often—taking care not to burn them. Put them into a large salad bowl
2. Mix together the dressing ingredients.
3. In the salad bowl, add the lettuce, cheese, pear, and apple to the warm nuts. Toss with the dressing and serve. Serves 4.
